Paneer-Veg Cutlet



Cutlet is a very popular snack item which can be served as an appetizer or as HI tea snack. It is great option for small parties and get together as you can make the pre-preparation and freeze/refrigerate. I have amazing memories associated with these cutlet from my college life. Whenever we use to travel by train, I use to eat those cutlet which we get in train. 




RECIPE:
Cooking Time: 15 mins
Preparation Time: 20 mins

Ingredients:

  • Potato: 2 small( Boiled and mashed) 
  • Paneer: 1/2 cup( crumbled)
  • Carrot: 1/3 cup( grated)
  • Peas: 1/4 cup
  • Bread slice: 2 
  • Onion: 1 small( finely chopped)
  • Ginger-garlic-chilli paste: 1/2 tsp
  • Jeera/cumin: 1 tsp
  • Red chilli powder:1/4 tsp
  • Turmeric powder: a pinch
  • Coriander leaves: few strings
  • Oil: 1 tsp
  • Salt as per taste
  • Maida/all purpose flour: 2 tbsp

For the Breadcrumbs:
  • Bread slices: 3-4



Method:





  • Heat the oil in kadai/pan and add jeera.
  • When jeera start splutter then add Onion and saute till onion is transparent  then add ginger-garlic-green chilli paste and cook for min or till raw smell leave.


  • Add the grated carrot, cook for 2 mins then add peas and cook for another 2 mins.
  • Add the red chilli pwd, turmeric and salt and give it a quick stir.


  • Add the mashed potato and and coriander leaves fry till everything mixes well.


  • Add the crumbled/grated paneer and mix well. Remove from heat and keep aside.
  • Add the crumbled bread and make a dough. 


  • Pinch out a small ball size dough and give a cylindrical shape as shown in pic. Keep aside.


  • Grind the bread to make a breadcrumbs.
  • Take maida/all purpose flour in bowl and add little water to make a paste.


  • Take a cylindrical shape cutlet and dip in all purpose flour paste as shown in pic, then roll in breadcrumbs. Make sure that cutlet is well coated with breadcrumbs.


  • Heat sufficient oil in kadai/pan and fry these cutlet on medium heat till golden brown in color.
  • Take out and serve hot with sauce.



Note:


  • Can use store bought breadcrumbs, but home made breadcrumbs give more crunchiness.
