Eggless Chocolate Muffin



Muffin is something which is loved by everybody. First time I had home made muffin at my co-sister's place, from that time only I wanted to give a try. Few weeks later, I got the recipe with a simple ingredients. Luckily I was having all ingredients at home so I thought to give it a try. Since I was making muffin for first time so I was bit scared, but it turn out perfect without any flaws !!!! After tasting the muffin,  Avi, my better half  said only one word... and that was " WOW". That three letter word was enough to tell how muffin tastes !!!!


RECIPE:

Cooking Time: 25-30 mins
Preparation Time: 10-15 mins


Ingredients:
  • All purpose flour: 3/4 cup
  • Coco powder: 2 & 1/2 tblsp
  • Sugar: 1/2 cup
  • Baking soda: 1/2 tsp
  • Salt: 1/4 tsp
  • Oil: 1/4 cup
  • Cold water: 1/2 cup
  • Vanilla essence: 1 tsp
  • Lemon juice:1 tsp

Method:


  • Sieve flour, coco and baking soda together twice and then mix in the salt and sugar. 
  • In another bowl, mix the oil, cold water and vanilla. 
  • Mix the dry ingredients and wet ingredients well until sugar gets dissolved.
  • Preheat oven to 190 C.
  • Just before baking, add the lemon juice and mix well.  
  • Arrange muffin liner in muffin baking tray and fill just 3/4.
  • Bake for 25 to 30 minutes or until tooth pick inserted comes out clean. Keep checking after 20 minutes. 
  • Once muffins are baked take it from the baking tray and cook it on cooling rack.




Note:
  • Add lemon juice just before baking.
  • Better to use fine grain sugar as it dissolve easily.
