Eggless mango cake




Mango cake is a quite innovative way of using mangoes. It's delicious and easy and can be baked at anytime. It goes well as dessert or as tea time snack for "Hi tea". 



RECIPE:

Cooking Time: 30-35 mins
Preparation Time: 15-20 mins

Ingredients:


  • All Purpose Flour: 1 cup
  • Rava/Sooji: 1/4 cup
  • Baking pwd: 1 tsp
  • Baking soda: 1/2 tsp
  • Mango Puree: 1 cup
  • Sugar: 1/2 cup( adjust according to sweetness of mango puree)
  • Milk: 1/4 cup + 2 tbsp
  • Oil: 1/4 cup
  • Cardamom powder: 1 tsp
  • Salt: a pinch

Method:


  • Sieve the all purpose flour, baking soda, baking pwd and salt. 
  • Combine rava and all purpose flour, mix well. Keep aside.
  • Combine mango puree, sugar, milk, oil, cardamom powder until sugar is completely dissolved.
  • Add  the all purpose flour mixture to the mango puree mixture and mix well.
  • Preheat the oven to 180 C. Grease a loaf pan and keep keep aside.


  • Pour this cake mix to the greased pan. Bake for about 30-35 mins or until a toothpick inserted at the center comes out clean. 
  • Let the cake be in the pan for about 10 minutes and transfer it to a cooling rack , allow it to cool and then cut into slices.



Note:
  • If cake mix is thick then add little more milk
