Dahi Vada


My mother in law's Dahi Vada is very famous among friend's and family. Her Dahi Vada is so soft that it just get dissolve in mouth. Taste is so tempting and delicious. Whenever she visit our place we ask her to prepare some of her best recipes and dahi vada is among one of them.



RECIPE:

Cooking Time: 20-25 mins
Preparation Time: 10-15 mins
Soaking Time: 6-7 hrs


Ingredients:

Split Urad dal: 1 cup( soak for atleast 6 hrs)
Cumin seed: 1/4 tsp
Ginger: 1/2 inch
Green chilli: 2
Curd: 3 cups
Tamarind chutney: 2 tbsp
Roasted cumin seed pwd: 2tsp
chilli pwd: 1tsp
Salt to taste
Oil for deep frying


Method:

For the vada:
  1. Wash and drain the urad dal.
  2. Combine the urad dal, ginger and green chilli and grind to a smooth paste using little water.
  3. Add  salt to the urad dal paste and mix well till the batter is light and fluffy. 
  4. Wet your hands and take 2 tbsp of the batter on your palm or on a sheet of wet plastic and shape into a circle.
  5. Deep fry in hot oil on a slow flame till the vadas are golden brown.
  6. Drain on absorbent paper and keep aside.
For making dahi vada:
  1. Whisk curd to get smooth texture and add 1/2 tbsp sugar and salt to taste.
  2. Soak the deep fried vada in warm water for 30-45 mins.
  3. Just before serving, drain and squeeze out the excess water.
  4. Arrange the vada on a serving dish and top with the whisked curd.
  5. Garnish with the chilli powder, cumin seeds powder and tamarind chutney.
