Mini Black Forest Cake (Eggless)

Black Forest Cake is one of the popular cake. It takes time to prepare but it's worth preparing. Since I wanted to bake cake for Avi's Birthday so I prepared this cake as a trial beforehand. I wanted to  make sure that yes I'm ready for it and when I prepared this cake for the first time, it did not let me down.

Cooking Time: 2-3 hrs
Preparation Time: 45 mins

  • All purpose flour: 1 and 1/4 cup
  • Cocoa pwd: 1/4 cup
  • Curd: 1 cup
  • Sugar: 3/4 cup
  • Baking soda: 1/2 tsp
  • Baking pwd: 1 and 1/4 tsp
  • Oil: 1/2 cup
  • Vanilla essence: 1 tsp    
Whipped cream icing:
  • Fresh cream: 1&1/2 cup
  • Sugar: 1/3 cup 
  • Vanilla essence: 1/2 tsp             
Sugar Syrup:
  • Sugar: 1/3 cup
  • Water: 3/4 cup         

Method for chocolate cake:

  • Preheat oven to 200 C for 10 mins. Grease and flour the baking tray.
  • Sieve all purpose flour/maida and cocoa pwd together.

  • Cream the sugar and yogurt/curd until the sugar is completely dissolved. Add baking powder and baking soda and mix well. Keep aside for 4-5 mins and you will find that bubbles appear.

  • Now add vegetable oil and vanilla essence and mix well. 
  • Now slowly add little portion of flour/maida  and cocoa pwd mixture( dry ingredients) at a time and blend with the wet ingredients. Beat well until creamy.

  • Transfer the cake mixture into baking tray.
  • Bake in preheated oven at 200 degree C for 10 mins, reduce temperature to 175 and bake for 25-30 mins or till a toothpick inserted into the cake comes out clean.
  • Cool the cake for 15-20 mins and then invert in plate.
  • Cut the sponge into 3 small size round shape.Keep aside.

Method of whipping cream for icing:

  • Pour the  cream into a large bowl.
  • Take ice cubes in large bowl and place cream bowl in large bowl.

  • Add the sugar,  and vanilla extract. 
  • Whip the mixture together until get soft peaks( as shown in pic).
  • Let the whipped cream cool in the fridge for about 15-20 mins. 

Method of sugar syrup:

  • Take some water in a bowl around 3/4 cup add some sugar mix it well to make sugar syrup. This is to make the sponge moist.

Time to assemble:

  • Take one layer of sponge cake sprinkle some sugar  syrup and apply the cream. 
  • Place strawberry jam or any other jam on the cream .

  • Keep another sheet of spongecake put it over cream again sprinkle some sugar  syrup again abd again repeat the same process .

  • Add third layer of sponge cake and sprinkle  sugar syrup and apply cream  and cover the cake from all sides nicely.
  • Decorate with grated chocolate and your cake is ready.

  • 1/2 cup of cream, will yield 1 cup whipped cream.
  • Adding more sugar will fluff up the mixture.
