Aloo/Potato Katori Chaat

Last week I was watching Masterchef India and in that show contestants were asked to prepare the katori made of potato. That katori hooked me and next day only I prepared that katori. Since previous Chaat recipe was big hit and few of my friends ask me to post different types of chaat recipe.  Being a huge fan of chaats, I used that potato katori which I prepared after watching the show to prepare the another version of katori chaat recipe.

RECIPE:

Cooking Time: 15-20 mins
Preparation Time: 15-10 mins

Ingredients:

For the Katori:
  • Potatoes: 4 large (pealed and grated)
  • Chilli flakes: 1 tsp
  • Corn flour: 1-2 tbsp
  • Salt :  a pinch
  • Steel tea strainer: 2
  • Oil  for deep frying

For  the Chaat:
  • Chole: 1 large bowl
  • Onions: 1 large (finely chopped)
  • Green chutney: 1/4 cup
  • Tamarind chutney: 1/4 cup
  • Curd: 1/2 cup
  • chaat masala: 2 tbsp
  • Red chilli pwd: 1 tbsp
  • Sev bhujiya: 1/3 cup
  • Roasted cumin pwd: 1 tbsp
  • Coriander leaves ( finely chopped)
  • Salt to taste

Method:

For Potato Katori:

  • Squeeze the excess water from grated potato otherwise when you put it in the oil, they will splutter a lot.
  • Add the salt, chilli flakes and corn flour, mix well.
  • Heat sufficient oil in pan/kadai.
  • In strainer  put a handful of the grated potatoes in it and spread evenly( as shown in pic).

  • The layer should be thick enough otherwise katori will break the moment you try to remove the fried bowl from the strainer
  • Put the other strainer on top of it and immerse in the hot oil. Cook for 1-2 mins  then remove the upper strainer and leave the bottom strainer with basket in oil till the whole katori is evenly cooked or golden brown in color. Once done, overturn the strainer and gently tap to remove the katori.

For Katori Chaat:

  • Place one katori in serving plate and pore 1 ladle of  chhole in a katori. Add few pieces of potato.
  • Add 1-2 tbsp of curd/yogurt.
  • Drizzle tamarind chutney and green chutney(as per taste).
  • Sprinkle chat masala, roasted cumin pwd and chilli pwd.
  • Garnish with chopped onion, sev, chopped coriander leaves.
  • The mouthwatering chaat is ready.

Note:
  • Can also bake these katori using muffing moulds if you wants to make it healthier.
  • If required can increase the amount of cornflour to grated potato mixture.
