Eggless Mini Doughnut


This is the first time I made Doughnut at home. Since my son likes doughnut, so thought to give it a try. After going through many doughnut recipe,I customize it and give it my own version. I tried doughnuts with three different types of glaze.


RECIPE:

Cooking Time: 30-35 mins
Preparation Time: 1 hr

Ingredients:

All purpose flour/maida: 1 & 1/2 cups 
Active dry yeast: 1 tsp 
Luke warm milk: 1/2 cup
Vanilla essence: 1/2 tsp
Sugar: 1/8 cup
Salt: pinch
Butter (room temperature): 1 tbsp 
Oil for frying

For Cinnamon sugar glaze:

1tbsp Cinnamon
4tbsp Powdered sugar

For The Glaze:

Butter-1/4 cup
Icing Sugar-1 cup
Milk-3 tbs
Vanilla Essence-1 tsp

For chocolate glaze:

Powdered sugar - 1/2 cup
Cocoa powder - 2tblsp
Milk - 2.5 tsp
Vanilla essence - 1/4 tsp

Method:

For Doughnut:


  • Take luke warm milk ans add the yeast, a tsp of sugar in  too it, let it sit for few minutes until its turns foamy.
  • In large bowl combine  the sugar,butter and all purpose flour and vanilla essence.
  • Mix them well and then  add the foamy yeast and make a dough.


  • Place the dough in a greased bowl and keep aside in a warm place  for 1 hour at least .
  • After  an hour, transfer the dough to a floured surface and  roll it gently as a thick circle.
  • Use a doughnut cutter to cut the donuts.( use a small  bowl of different size )


  • Set them aside for half an hour to rise again.
  • Heat sufficient  oil for deep frying.
  • Fry the raised doughnuts to the hot oil  until they turns golden brown.
  • Drain the excess oil with a paper towel.


For Cinnamon sugar glaze:


  • Mix both cinnamon and powdered sugar in a plate.
  • Roll the deep fried donuts in this cinnamon sugar.

For the Sugar Glaze:


  • Mix sugar, vanilla and butter.
  • Add milk and make the glaze. Dip the doughnuts in the glaze.

For chocolate glaze:


  • Mix all the ingredients in a bowl and see to that it doesn't form lumps. You can adjust the quantity of milk to make it thick.
  • Dip the doughnuts in the glaze and allow it to set for 10 mins.


Note: 
  • If using salted butter then do not add salt.
  • Use powered sugar for making dough.
  • Adding vanilla essence in dough is optional.
