Kadai Vegetables


Kadai Vegetable is somewhat similar to mix veg, but rich in texture. Its a new and richer way of preparing mix veg. It tastes awesome and its gravy is quite similar to any rich paneer gravy.

RECIPE:

Cooking Time: 15-20 mins
Preparation Time: 10-15 mins

Ingredients:

  • Cashew: 15-20 pcs
  • Beans: 1/4 cup ( chopped)
  • Carrot: 1/4 cup ( chopped)
  • Cauliflower: 1/3 cup ( chopped)
  • Potato: 1/2 cup ( pealed and diced)
  • Peas: 1/4 cup
  • Paneer: 1/4 cup
  • Onion: 1 large( finely chopped)
  • Tomato: 1 large( finely chopped)
  • Ginger-garlic paste: 1 tsp
  • Turmeric pwd: 1/3 tsp
  • Cumin pwd: 1/3 tsp
  • Chilli pwd: 1/4 tsp
  • Garam masala: 1/4 tsp
  • Salt to taste


Method:


  • Soak the kaju in warm water for 15-20 min and then make a fine past.
  • Heat  1-2 tsp oil in pan and add jeera, once it start splutter add chopped onion and saute. Add ginger garlic paste and cook till golden brown in color.
  • Add chopped vegetable and cook till veggies get tender.


  • Add chopped tomato and all dry masala pwds. Cook for 5-6 mins or till oil start separating.


  • Add kaju paste. Mix well and cook for another 3-4  mins.
  • Add water as per desire thickness and cook for few mins.
  • Serve with paratha/rice/pulao.



Note:
  • Can add any veggies of your choice.
  • Can also add little cream to make it more rich.
