Veg Pulao




Veg Pulao is a rice preparation which is loved by all rice lovers including me :). It is very tasty and contains lots of veggies.


RECIPE:

Cooking Time: 20-25 mins
Preparation Time: 10-12 mins
Serve: 2
Cuisine: North Indian


Ingredients:

Long grain basmati rice: 1 cup
Green peas: 3/4 cup
Cashew: 10-12 nos(fried)
Onion: 1 small(finely chopped)
Vegetables: 1 and 1/2 cup(beans,carrot,peas, etc)
Ginger garlic paste: 1/4 tsp(optional)
Cumin seed: 1/3 tsp
Clove: 2 nos
Cinnamon stick: 1/2 inch
Black cardamom: 1
Bay Leaf: 1
Ghee
Salt to taste


Method:


  1. Wash the rice and keep aside.
  2. Heat ghee in pan and add cumin seed, clove, Cinnamon stick, black cardamom, bay leaf and fry for min then add ginger garlic paste and chopped onion, cook for another 2-3 mins.
  3. Add vegetable and cook till they turn crisp, then add rice and fry for 1-2 mins.
  4. Then add 2 cups of water, salt and cook on medium heat.
  5. When rice is 90 percent done then add fried cashew and mix well. 
  6. Cover the pan and cook on low heat till rice is done.
  7. Serve with paneer gravy or raita.
Note.
Can cook rice separately and then mix with vegetable mixture.
Can also cook rice in rice cooker.
Ginger garlic paste is optional.
